  • Watercress or loose-leaf lettuce
  • Scallions
  • Carrot strips
  • Radishes
  • Small tomatoes
  • Yellow tomatoes
  • Cauliflower flowerets
  • Salt


Start with watercress or lettuce which has been washed, drained, and chilled. Pile this in the center of a large platter, sprinkle with salt and surround with scallions, carrot strips, sliced radishes, small tomatoes, yellow tomatoes, cauliflower flowerets or whatever your grocery store or garden has to offer. This will be a beautiful spread, is easy to make, and should be put in the focal point of your buffet.
