Ingredients:

  • 1 head broccoli
  • 3 tablespoons butter or 2 tablespoons olive oil
  • 1 tablespoon vinegar
  • 1/2 cup lemon juice (and grated rind)

Procedure:


Cut off tough leaves and stems. If stocks are thick, cut them in half lengthwise. Let soak in ice cold water with vinegar for half an hour. Drain and add 1 cup boiling, salted water. Cook 15 or 20 minutes. Meanwhile, melt butter and lemon. Drain broccoli thoroughly and serve with lemon butter. For a variation, use hollandaise sauce instead of lemon butter. Or, after draining, place broccoli in a casserole dish, dot generously with butter and sprinkle with Parmesan cheese. Place under broiler flame for five minutes before serving.
